Refreshing Cold Cucumber Soup

Spoon after spoon, pure indulgence. My cold cucumber soup is simply refreshing and super aromatic.

Refreshing Cold Cucumber Soup

  • 1 cucumber
  • 1 small piece of red radish *or 4 small radishes*
  • 200 g “yofu natural”
  • 2 cloves of garlic
  • Juice of 1/2 lemon
  • a little bit of fresh dill and garden cress *keep some dill for the garnish*.
  • a pinch of sea salt and a little bit of fresh pepper from the mill
  • 1 teaspoon cold-pressed olive oil

Peel the cucumber, remove the seeds and cut it lengthwise. Peel the radish and rub it. Peel the garlic and chop it. Clean the herbs and chop them. Now put everything together into a high vessel and puree it with an immersion blender. Season it with salt and pepper, add the olive oil, stir and put it aside for now.

Serve the cooled down soup in bowls or soup plates, garnish with the remaining dill and cress and serve it cold.

If you prefer the soup a bit more liquid, simply add some water.

My tip: If the temperatures outside get too hot, add some crushed ice to the soup.
