Lentil Salad

Would you like to experience a salad which does not just taste super fresh on the day you prepare it but even on the following day providing lots of energy and pure satisfaction? Then this recipe is just perfect.

The only thing you need is the fresh ingredients and an extra portion of love. Because thats the secret ingredient which makes this salad so divine;-)

 


Lentil Salad

  • 100 g of lentils *beluga lentils or others*
  • 2 radishes
  • 1 big and firm tomato
  • 1 onion
  • 2 tablespoons of dark balsamic vinegar
  • 2 tablespoons of cold-pressed olive oil
  • Sea salt and pepper from the mill according to your taste

Cook the lentils in slightly boiling and salted water until they are “al dente”. Remove the leafs of the radishes, clean them and cut them into thin slices.  Now rinse the tomato, cut it into small dices. Then peel the onion and cut it into small dices as well. Finally put all ingredients in a bowl, season them with vinegar, oil, salt and pepper, mix everything well and fill it into little bowls

My tip: The lentil salad will taste even better after a night in the fridge 😉
