Tropical Chia-Coconut Cup

Yeahhhhh, today I would like to introduce you to a super tasty and exotic breakfast. This breakfast comes with an extra portion of vitamins, omega 3 fatty acids, antioxidants and of course not to forget my favorite fruit the purple granadillo.
Purple what? Never heard. Yes you did;-) It’s none other than the exotic passion fruit.

This slightly sour tasting fruit with it’s yellow and jelly-like pulp and seeds comes from Australia, India, Africa and South America and this climbing plant doesn’t really like temperatures below 10 degrees celsius.

If you happen to live in a warmer country or you have a conservatory then your lucky since you are able to plant it and you can can harvest this little vitamin injection every year;-)

Tropical Chia-Coconut Cup

  • 80g chia *white*
  • 20g coconut flakes 
  • 20 passion fruits
  • 250ml coconut milk *Optional: Almond or rice milk*
  • 1 tables spoon of rice syrup *Optional:Agave syrup, maple syrup, apple syrup or coconut blossom syrup*

Fill the milk into a small pot, add the syrup and let the milk slowly boil up. Stir continuously so that the syrup can dissolve. Fill the chia seeds and the coconut flakes into a small bowl mix both ingredients with a spoon. Now fill the chia mix into two glasses *Or two bowls* and slowly pour 125ml milk in each glas or bowl and let it soak for 15-20 minutes. Halve the passion fruit, remove the pulp with a spoon and distribute it over the soaked chia mix. If you don’t like the seeds, simply distribute some passion fruit syrup over. Mhhhhhhhhh……. so delicious.
