Wild Garlic Soup

Since a few days a nasty cold is bugging me and I decided to do something against it. And my ultimate remedy is this immune boosting wild garlic soup.

This recipe was created by a dear friend and I was more than excited about how it will taste. And I must say apart of tasting really good it is quickly prepared as well. If I made you curious and you would like to try this recipe out you will need the following ingredients.


Wild Garlic Soup

  • 100 g of wild garlic
  • 400 ml vegetable broth = 100 ml water plus 3 tablespoons of granulated vegetable broth. Recipe see page…
  • 150ml soy cream *sugar free and without sugar substitutes*
  • 2 medium-sized potatoes
  • 1 onion
  • 2 tablespoons of soy yoghurt *sugar free and without sugar substitutes*
  • 1 tablespoon of coconut oil
  • Sea salt according to your taste

First, clean and then chop the wild garlic. Then, peel the potatoes and the onion and cut them into dices. Heat the coconut oil inside a pot, add the potato and onion dices and braise under constant stirring. Now take the broth, deglaze the dices, add the cream and let it simmer for approx. 20 minutes. Next, add the chopped wild garlic, switch off the fire and puree the soup with an immersion blender.

Finally, season the soup with some salt, add the soy yoghurt and stir everything well for one last time.

My tip: Before you serve, foam up the soup with an immersion blender.
