Courgette & sweet potato soup with fresh herbs

Today I realized once more that the simple things in life can be sooooo yummy. 

I had exactly 2 courgettes and a few sweet potatoes left in the fridge and I needed to do something with them, because Micha was very hungry. And that means: It must go fast 😉 And soups are usually fast to prepare. OH YEEEES, a little soup for the finicky eater hihihihihi.You won’t believe how quick this soup is prepared. So my dears, hurry up and rush to the cooking pot.

 


Courgette & sweet potato soup with fresh herbs

  • 1 courgette
  • 2 sweet potatoes
  • 1 onion
  • 600 ml vegetable broth (600ml water plus 2 tablespoons granulated vegetable broth), because it is free of yeast and sugar*
  • A few sprouts *optionally add some fresh cress*
  • 1 tablespoon of vegan butter *optionally add normal butter*
  • A pinch of sea salt and fresh pepper from the mill
  • 1 green chili-pepper

Clean the courgette and dice it. Peel the sweet potatoes and the onion and dice them as well. Add some butter to a pot and let it melt, add the onion and potato cubes and brown everything until it has a nice gold color. Now add the courgette, stir well, deglaze with the vegetable broth and let it simmer, until the potatoes are well done. Halve the chili, remove the seeds and chop the chili well. Clean the cress. Now fill the the soup into a blender and mix everything well. Finally add some chili according to the desired spiciness, blend once more and season with salt and pepper.

Serve the soup on 2 plates or bowls, sprinkle the cress over and enjoy.
