One-Pot-Sweet Potato Veggie Stew

This quickly prepared and super tasty one-pot is the perfect companion for cold, uncomfortable autumn days. It provides us with inner warmth and lifts your spirits within minutes. You don’t believe me? Just try it 😉

One-Pot-Sweet Potato Veggie Stew

  • 500g sweet potatoes
  • 3 carrots
  • 1/2 leek 
  • 2 small onions 
  • 2 cloves of garlic 
  • 1 small piece of ginger 
  • 2 tablespoons of cold pressed olive oil
  • 1 tablespoon of tomato paste *sugar free*
  • 1 bay leaf
  • ca 600ml Vegetable broth
  • 1/2 tea spoon of curcuma
  • 1 bunch of fresh chives
  • Sea salt
  • Fresh pepper from the mill

Peel and dice the sweet potatoes and the carrots. Clean the leek and chop into rings. Peel the onions and the garlic and chop both.  Grate the ginger, clean the chives, shake them dry and chop.  Pour oil into a pot, add the onions, the leek, the carrots, the sweet potatoes and brown everything from all sides. Add the tomato paste, stir, add the garlic, the ginger, the curcuma, the bay leaf and the broth. Stir well, cover with a lid and let the stew simmer for about 20-25 minutes on low temperature. In the meantime, prepare two plates or bowls and add some salt and pepper to the one-pot if necessary.  Right before you serve, scatter some chopped chives over the stew. mhhhhhhhhhh… yum, yum;-)
