Gluten free seed bread

I love the smell of fresh bread. Heavenly! And somehow the smell still reminds me of my childhood, when my mother used to bake the bread herself. Of course back then it wasn’t gluten free 😉

 

But the smell, is still the same 😉 After this tasty bread cooled down I used it to prepare some yummy sandwiches.

Gluten free seed bread

  • 110 g of ground almonds
  • 100 g of sunflower seeds
  • 3 tablespoons of linseeds
  • 2 tablespoons of apple pectin
  • 1 tablespoon of psyllium
  • 1 teaspoon of baking powder
  • 1 teaspoon of sea salt
  • 1 teaspoon of caraway
  • 1 tablespoon of rice syrup
  • 4 eggs
  • 250 g of curd
  • A handful of sunflower seeds (Scatter them over the bread in the end)

Put all dry ingredients into the bowl of your mixing machine. Preheat the oven up to 170 degrees and lay out some baking paper within a baking dish. Now put the the eggs, the curd and the syrup into a different bowl and mix everything very well. Then add this mix to the dry ingredients and let the mixing machine create a nice dough. Next, fill the dough into the baking dish. Moisture the dough with some water, sprinkle the remaining seeds over and let the bread bake for approx. 1 hour.

After the baking process allow the bread to cool down completely on a rust. My tip: I always put a bowl of water into the oven.
