Beetroot soup with lot’s of love

Do you like beetroot?

To be honest, it took me quite a while to befriend myself with it. There is a little story to it.

During my childhood I just had too much of this nodule. My parents used to tell me how healthy beetroot is and that I need to eat it to get tall and strong.

Which child at the age of 6 can understand that? My mom prepared beetroot juice, salad and even baked it! Urrghhhh. To be honest, I wouldn’t have been surprised if my mom would have added some beetroot on my school sandwich 😉 But as I said, this was a long time ago, nowadays we are good friends. Good buddies 😉 And that has its reasons. First of all, this nodule is quite powerful and second, Micha is not 6 years old anymore 😉 Supposedly, (I can’t make any remedial statements here), the miracle nodule delivers a whole series of vitamins *A, B, C and folic acid*. And it gets even better, because apparently beetroot can extend even narrowed vessels again, lower the blood pressure AND protect against cardiac infarction. WOW!! And because your health is as important to me as the health of my family, I prepared a beetroot soup with coconut and lots of love 😉


Beetroot soup with lot’s of love

  • 300 g of beetroot *fresh*
  • 500ml vegetable broth
  • 80ml coconut milk
  • 2 small potatoes
  • 1 shallot
  • 3 tablespoons of cold-pressed olive oil
  • 1 tablespoon of apple vinegar
  • A pinch of sea salt
  • Fresh pepper from the mill

Peel the beetroot *please wear gloves* and cut it into small dices. Peel the potatoes, and cut them into small dices. Peel the shallot and cut it into small dices. Heat up some oil in a pot and glaze the shallot in it. Add the potatoes and the beetroot and briefly start to braise everything with the onions. Add 100 ml of vegetable broth and let it boil down bit. After approx. 5 minutes add the remaining vegetable broth, stir again and cook the vegetables.

Afterwards mash everything with an immersion blender, add the apple vinegar, the coconut milk and season the soup with salt and pepper before you serve.
