Is there anything better and lighter than a lovely and refreshing soup during this time of the year? Definitely not for me! Anyhow, I am a soup freak and this is without any doubt MY favorite summer soup. The refreshing flavor of the orange meets the mild coconut… mhhhhhhh! I think I am addicted and I really hope that you will like my carrot-coconut-orange soup as much as I do!! Have lot’s of success and enjoy ♥

Cold Carrot-Coconut-Orange-Soup With Lot’s Of Protein

  • 200g carrots *Optional: Pumpkin*
  • 1 small onion
  • 1 tablespoon of cold pressed olive oil 
  • 400-500ml vegetable broth *According to the desired consistency*
  • 80ml coconut milk *sugar-free*
  • 1 orange
  • 1/2 lime
  • 1/4 chili pepper 
  • Some sea salt
  • Some fresh basil leaves
  • 2 tablespoons of hemp seeds

Peel and dice the onion and the carrots. Juice one half of the orange and cut the other half into slices. Pour oil into a pot, slightly heat it up and brown the carrot and onion dices for 2 minutes within. Deglaze everything with the vegetable broth and continue to simmer. Add the orange slices after 10 minutes. As soon as the carrots are soft, remove the orange slices and puree the soup creamy. Add the coconut milk and the chili, stir well and let the soup cool down. In the meantime juice the lemon and leave the juice aside.

Chop the chili. Clean the basil and dab it dry. As soon as the soup cooled down, season it with salt, some orange juice and the lemon juice. Afterwards distribute it into two different bowls.

Before you serve, add the basil and scatter 1 tablespoon of hemp seeds over each plate. *If you want your soup to cool down faster, simply store it in the fridge and add some ice cubes;-)*
