A colorful-Wild-Rice-Power-Salad with roasted nuts

Today I would like to introduce you to a very tasty, versatile and colorful autumnal salad, charged with power and energy;-)

I can only say…….. yummyyy……. I recommend you to try this recipe asap!

A colorful-Wild-Rice-Power-Salad with roasted nuts

  • 150g wild rice
  • 150g mixed salad *Only lambs salad works perfectly fine* 
  • 1 pomegranate
  • 1 kaki
  • 1 apple 
  • 1 avocado
  • Cold pressed olive oil 
  • Raspberry vinegar
  • Sea salt
  • Pepper
  • A handful of mixed nuts 
  • 2 El Hanfsamen
  • 2 tablespoons of hemp seeds 

Fill the wild rice into a bowl, clean it and drain the water afterwards. Cook the rice within a pot containing 200ml water. In the meantime, clean the salad and let it drain within a sieve. Quarter the pomegranate and carefully detach the seeds. Peel the kaki, halve and dice the pulp. *If you bought a organic kaki it is not necessary to peel it, simply rinse. That applies to the apple as well.  Peel the apple / if organic simply rinse, halve, remove the seeds and dice the rest. Prepare the vinaigrette within a small vessel and leave it aside. Brown the nuts within a coated pan without the usage of oil.

*Attention: Don’t let them get to dark!*

Fill all the ingredients *except for the dressing and the nuts*, into a bowl, mix well and just before you serve, pour the vinaigrette and the nuts over the salad.
