Mallorquin Potato Puree by Kika
A few days ago we were invited for dinner by my dear friends *Kika und Xavier* and I had this amazing potato puree, which I had to share with you. This puree is fluffy, light, creamy, without any butter but with lot’s of herbs. Just wow!! Thank you so much my dear friend Kika for sharing this amazing recipe with us! Thumps up, this recipe really deserves to be part of my blog! I just changed one little detail by adding some fresh marjoram. Apart from that, this recipe is originally from Kika ♥
And here comes the recipe:
Mallorquin Potato Puree by Kika
- 6 middle sized potatoes
- 1/2 tablespoon of rosemary needles
- 1 table spoon of fresh thyme
- 2 table spoons of fresh marjoram
- 4 table spoons of olive oil *the best you can find*
- Sea salt
- Optional. Fresh pepper from the mill
Clean the potatoes, cook them in salted water, remove the peel while the potato is still hot and put it in a bowl. Clean the herbs and shake them dry. Add oil, herbs and some salt to the potatoes, knead everything well with your hands and use a potato masher to puree everything properly. Once again check the taste of the puree and serve it as a side dish.
