Quinoa Vegetable Pan

I’ve been wanting to cook this tasty vegetable pan since a long time and today I’ve finally tried it out. But this time I will let the picture speak for themselves… taaaasty!

The quinoa pan doesn’t just look good but it tastes extremely nice and guess what? I didn’t pair it with ANYTHING;-) It’s so satisfying that it serves as the perfect main course, without any side dish needed.

PS: You react to quinoa? No problem! Simply use buckwheat or whole grain rice instead. You can vary the vegetables according to your taste, tolerance and the season.

Quinoa Vegetable Pan

  • 150g mixed quinoa *red & black* 
  • 3 carrots
  • 2 green peppers 
  • 1 red pepper 
  • 1 bunch of green asparagus 
  • 1 fresh corncob 
  • 1/2 chilicote
  • 1 clove of garlic 
  • Some fresh coriander 
  • 100g of red beans *pre-cooked*
  • 1/2 a lemon 
  • Sea salt 
  • Fresh pepper from the mill 
  • A pinch of cumin 
  • 2 tablespoons of coconut oil 

Rinse the quinoa in a sieve and let it drain. Afterwards, fill it in a pot containing 350ml of salted water, boil it up and let the quinoa cook on medium heat for 15 minutes. Clean and dice the vegetables. Clean the asparagus, cut 2 cm of the ends off and chop the rest of the asparagus into 6cm long pieces. Now remove the leaves of the corncob, rinse of the thin strings under cold water or use a brush to remove them. Afterwards use a knife to cut the corn off the cob.

Chop the chili, peel the garlic and cut it into thin slices. Clean the coriander, shake it dry and chop. Heat the coconut oil in a pan and gently brown the vegetables within.

Meanwhile pour the quinoa into a sieve and fill it into a bowl. Add the cooked beans and the coriander to the vegetables , season everything with some spices and lemon juice, mix everything very well and serve.

If you prefer to serve the quinoa vegetable pan as a side dish, simply pair it with a pan-fried piece of chicken breast filet! Optionally you can pair the quinoa pan with some feta cheese. But it doesn’t really matter which option you choose, all of them will taste delicious.
