Fresh Melon Salad
And in today’s episode of Micha’s Kitchen Revolution we would like to introduce you to a sun kissed melon salad.;-) You’ll just need a few ingredients, but the combination of the juicy-sweet water melon, the tasty basil and the fresh mint makes this salad THE perfect summer dish. If you want, add some feta cheese as well!
Fresh Melon Salad
- 1/4 of a water melon without seeds
- 50ml cold-pressed olive oil
- A handful of basil leaves *keep some leaves aside*
- A bigger pinch of lemon salt
- freshly ground black pepper
- optionally a few fresh mint leaves or sprouts
First pour the olive oil into a higher vessel, clean the basil leaves, chop them and add them to the oil. Now use a mortar to crush the basil leaves, then mix everything very well and let it infuse for at least 1 hour.
Cut the water melon into dices, pour the basil oil over and season with lemon salt and the fresh pepper. Serve the the fresh melon salad on plates, garnish with the remaining basil leaves and enjoy.
