Champignon Tofu Spread
Tataaaaaaaa, spread Nr.4;-) This time with tofu and fresh champignons. Yes, this spread is very special as well.
It has super mild flavor and it has a super creamy consistency. AND it is the perfect match for my carrot bread recipe.

Champignon Tofu Spread
- 150 g of smoked tofu
- 100 g of white champignons
- 1 shallot
- 50 g of pine seeds
- 30 g of tomato paste *without sugar*
- A handful of fresh parsley
- 1 tablespoon of cold-pressed olive oil
- Sea salt and pepper (according to your taste)
Cut the tofu into dices.
Clean and chop the champignons.
Peel the shallot and chop it into dices.
Clean the parsley, shake it dry, hack it well and pluck of the leaves. Now sear the shallots in a frying pan with some olive oil, add the tofu and the mushrooms, stir everything well and sear until its golden/brown. Afterwards put the the mixture into a blender, add the pine seeds, the tomato paste, the parsley and mix everything roughly. Turn the blending intensity down and slowly add the olive oil. Finally blend one last time and season with salt and pepper.
