Salad of spinach with feta cheese
I don’t know about you but I love salad in all variations and somehow I like especially this one because it is so fresh and crisp.
In case you don’t like goat cheese or you suffer from an intolerance simply substitute it through sheep’s cheese. If you prefer your salad completely without cheese, refine it with some pumpkin or sunflower seeds. It tastes really good without cheese as well. There are no limits set to your creativity Simply try it out. Intolerance to figs? No problem! You can substitute them through fresh apricots, strawberries, peaches, nectarines or even through grapes.
Intolerance to almonds? Simply use finely hacked walnuts, they are a delicious substitute.
Salad of spinach with feta cheese
- 200 g of spinach
- 200 g of goat cream cheese
- 4 dried tomatoes
- 3 figs
- A handful of almond splinters
- Some goji berries
- 1 tablespoon of hemp seeds
- For the dressing:
- 1 tablespoon of maple syrup
- 3 tablespoon of raspberry vinegar
- 1/2 squeezed orange
- 4 tablespoons of cold-pressed olive oil
- Sea salt and pepper from the mill
Clean the spinach, shake it dry and fill it into a bowl. Clean the figs as well and cut them into thin slices afterwards. Slightly brown the almond splinters in a pan until they become golden-brown. Pour some hot water over the tomatoes, wait a moment and add them to the spinach.
For the dressing:
Squeeze the orange, catch the juice in a vessel and put it aside for the moment. Now add all the remaining ingredients, mix them well well with each other and if required season with salt and pepper. Pour the dressing over the salad, mix everything well and add the almond splinters, the goji berries and the hempseeds. Serve the spinach salad on nice plates and use the fig slices as a final decoration.
