Baked Cod Fish Filet in a Herb-Crust & Leaf Spinach

Especially now since easter is around the corner, this super delicious fish meal is the perfect match. And the best thing about it is that its prepared and ready to eat within 20 minutes.  Pair potatoes or a creamy potato puree along with the fish. I promise, your guests will be more than happy. 😉


Baked Cod Fish Filet in a Herb-Crust & Leaf Spinach

  • 2 cod fish filets  *Optional: A different fish according to your tolerance*
  • 2 tablespoons of chopped parsley.
  • 1 tablespoon of freshly, chopped thyme
  • 1 tablespoon of freshly chopped rosemary
  • 1 tablespoon of freshly chopped chives.
  • 70g gluten free bread crumbles
  • 1 lemon
  • Zest of a lemon
  • 1/2 tablespoon of vegan butter *Optional: Normal butter*
  • A pinch of sea salt
  • Fresh pepper from the mill
  • 1 tablespoon of cold pressed olive oil

 

Ingredients for the spinach: 

  • 1 kg of fresh spinach *I know, it sounds like a lot but the spinach will shrink a lot within the pan*;-) 
  • 1 clove of garlic
  • Some freshly ground nutmeg
  • A pinch of sea salt
  • Fresh pepper from the mill
  • 1 tablespoon of freshly pressed olive oil 
  • 1/2 tablespoon of vegan butter *Optional: Normal butter*

Preheat the oven up to 180! upper and under heat.

 Clean the fish filet, dab it dry and leave it aside. Remove the stalks of the spinach, clean the leaves and let them drain within a sieve. Peel the garlic and cut it into thin slices. 

Give the bread crumbles, the chopped herbs, the lemon juice, the lemon zest and the butter into a bowl, mix everything very well and season with the spices.  

Pour oil into a baking tray, place the filets on top and cover them with the breading. Shove the fish into the preheated oven, switch into “grill” mode after about 10 minutes and continue to bake everything for 2-3 minutes more.  

Please keep an eye on the fish during the baking process since the breading can burn pretty fast. 

While the fish is baking for another 2-3 minutes, lets take advantage of the time and let’s prepare the spinach. 

Give oil and butter into a pan, slightly turn the garlic within, add the spinach, stir and season with the spices. 

Take the fish out of the oven, distribute it onto your plates and serve it along with the spinach.
