Dolce Vita Summer Pasta
Mamma mia, that’s a good one! This lovely pasta is super easy and serves lot’s of aroma. The only question you’ll hear is: “May I have a second plate?”
Dolce Vita Summer Pasta
- 250g corn noodles
- 250g mixed mushrooms
- 2 cloves of garlic
- 1 zucchini
- 1 onion
- 1 chili
- a handful of cherry tomatoes
- 2 branches of thyme
- Olive oil
- 1 tablespoon of tomato paste
- 250ml vegetable broth
- fresh basil
- fresh rucola
- fresh sea salt
- Pepper from the mill
- A few sprinkles of lemon juice
Cook the corn noodles within a big pot until they are al dente and let them drain in a sieve. In the meantime clean and dice the mushrooms. Peel the garlic and cut it into thin slices. Peel and dice the onions. Hack the chili. *If you don’t like it so spicy, simply remove the seeds and only hack the peel* Clean the tomatoes, the rucola, the basil and let all drain.
Take a pan and brown the onions within some oil. Briefly stir and as soon as the onions are slightly brown add the zucchini and the mushrooms. Now add the chili, the garlic, stir well, add the tomato paste and deglaze all with the vegetable broth. Finally add the thyme, the tomatoes and let the sauce simmer until it is reduced by half. Put the noodles, the basil and the rucola into the sauce, gently stir, if necessary add salt and some lemon juice and serve as hot as possible.
