Creamy Coconut-Honey-Pistachio Ice Cream

Even though the weather is not very summery, my ice cream maker is already racing high! And to be honest, it’s so much fun to try out the craziest ice creations for you. And today I would love to introduce you to my taaadaaaa… super creamy coconut-honey-pistachio ice cream. you can easily prepare it in an ice cream machine. 

Creamy Coconut-Honey-Pistachio Ice Cream

  • 2 tins of coconut milk
  • 150ml almond milk *Optional: Rice milk, gluten free oat milk, soy milk*
  • 200g honey *Optional: You can use a syrup* 
  • 1 tea spoon of xanthan
  • 1 vanilla bean
  • 2 table spoons of chopped pistachios
  • Halve the vanilla bean and scratch out the pulp with a spoon. 
  • Now give all the ingredients *except for the pistachios* into a blender and mix everything very well. Duration ca 2 minutes.
  • Fill the stirred ice cream mixture into a bowl, add the pistachios and stir once again. Fill the creamy mixture for about 20-30 minutes into the ice cream machine. If you don’t have an ice cream machine, simply fill the ice cream mixture into a vessel, cover it with a lid and store it within the freezer.  

My tip: Stir the ice cream once in a while and put it back into the freezer.
