Crunchy Rice-Millet Bread

Hey, how is it going? Are you looking for a really good farmers bread that is easily and quickly prepared without many ingredients?!

Well, if so then I have just the right thing for you.

Let this rice millet bread rise overnight and on the next morning, simply bake it in your preheated oven. Lovely, easy and super tasty.

Oh and by the way! Please place your bread dough into a baking basket or a form and cover it ALWAYS first with some transparent film and a clean kitchen cloth. By doing that, you’ll avoid that the dough gets too dry.

Good tip right?;-) But now lets start.

In addition you will need a mixing machine, ca 100g or rice flour, a baking mat, transparent film, a clean kitchen cloth, a baking basket, a metall bowl filled with boiling water and some baking paper.

If you don’t have a baking mat and no baking basket, that’s no problem at all. Simply skip those steps.

Crunchy Rice-Millet Bread

  • 200g whole rice flour
  • 200g millet flour
  • 200g white rice flour
  • 2 tea spoons of sea salt
  • 4 tablespoons of psyllium husks
  • 700ml water *tepid*
  • 1 package of bicarb
  • 2 tablespoons of vinegar
  • 1 tablespoon of rice syrup
  • 1 tablespoon of oil

Give the psyllium husks into a vessel and add 300ml of the 700ml to the psyllium husks, stir and let them soak for about 10 minutes.

Give the flours and the salt into the mixing bowl and stir thoroughly. Add the bicarb, pour the vinegar over the bicarb and wait one minute.

Add the soaked psyllium husks into the flour mix and slowly activate the machine.

For now add 200ml of water and continue to stir. Repeat this step until you used up all your water. Afterwards add the rice syrup and stir. Please pay lots of attention to the dough. The dough needs to be nice but not too firm or too thin. You should be able to form it easily.

Take some rice flour from the 100g and scatter it over the baking mat or your baking surface. Place the dough on top and form it into a nice loaf.

Stray the remaining flour into the baking basket and add the loaf. If you don’t have a baking basket simply stray the flour into your spring form and add the loaf afterwards.

Cover the form or the basket with transparent film, a clean kitchen cloth and let it rise over night.

On the next morning, preheat the oven up to 23° (heat from above and below), remove the cloth and the transparent film, cover your griddle with baking paper and pre bake the dough for about 20 minutes.

Afterwards reduce the temperature down to 170° and continue to bake the bread for 30 more minutes. Perform the wooden stick test. If no dough sticks to the wood, take the bread out of the oven and let it cool down on the griddle. If theres some dough sticking to the wood, simply continue to bake the bread for 5 more minutes.
